Devilish Eggs (More Hungry Girl): Easter Food!

Easter is very close, and I don’t know about you, but one staple of Easter dinner at my house is deviled eggs. Well, and Christmas, and Thanksgiving; you know, we are just some egg eatin’ people. So, when I came across a healthier version by Hungry Girl, I was immensely happy. 

“Devilish Eggs

Ingredients

2 cups roughly chopped orange cauliflower

1/4 cup fat-free mayonnaise 

1 tablespoon sweet relish, patted dry

2 teaspoons minced shallots

1 1/2 teaspoons yellow mustard

3 wedges The Laughing Cow Light Creamy Swiss cheese

10 hard-boiled eggs, peeled

Directions

Place cauliflower in a large microwave-safe bowl with 1/3 cup water. Cover and microwave for 6 to 8 minutes, until soft.

Drain any excess water, and lightly mash cauliflower.

Transfer cauliflower to a small blender or food processor. Add mayo and briefly puree until just blended. 

Transfer mixture to a medium bowl. Add relish, shallots, mustard, and cheese wedges, breaking the wedges into pieces. Thoroughly mix. If you like, season to taste with salt and pepper.

Cover and refrigerate until chilled, at least 1 hour.

Run a knife lengthwise along the circumference of each peeled egg to separate the white into halves (like cutting around the pit of an avocado). Discard yolks. Evenly distribute cauliflower mixture among egg-white halves. If you like, sprinkle with paprika.

Do the Cabbage Pack: Hungry Girl Recipe

Here is the St. Patrick’s Day recipe…a day late. Sorry about that! This recipe is yummy for any time, though. 

“Do the Cabbage Pack

Ingredients
 
  • 1/2 head of green cabbage
  • 1 small onion, sliced
  • 2 tbsp. light whipped butter or light buttery spread (like Brummel & Brown)
  • Dash each salt, black pepper, and paprika, or more to taste
  • 1/4 cup precooked real crumbled bacon (like the kind by Oscar Mayer or Hormel)
  • 1 tsp. chopped garlic

Directions

Preheat oven to 400 degrees. 

Carefully remove the tough core from the cabbage using a sharp knife. Slice the cabbage half into 4 thin wedges. Halve each wedge, leaving you with 8 “chunks.” 

Lay a large piece of heavy-duty foil on a baking sheet and spray with nonstick spray. Spread the cabbage out in the center, and top with onion. Add butter in 4 evenly spaced dollops over the onion. Sprinkle with salt, pepper, and paprika. Top with bacon and garlic. 

Place another large piece of foil over the veggies. Fold together and seal all four edges of the two foil pieces, forming a well-sealed packet. 

Bake in the oven for 30 – 35 minutes, until veggies are soft. 

Let it cool slightly. Using oven mitts, carefully flip the packet over, allowing the butter mixture to coat the veggies, and then return to right-side-up. Cut the packet to release steam before opening it entirely. (Careful — steam will be hot.) If you like, season to taste with additional salt, pepper, and paprika.
